On the calculator and dial slides, ← → still change slides; use the slider, dial, or the + / − buttons to adjust values.

If the whole deck looks zoomed in on the iPad: pinch out to reset, or in Safari tap the AA button in the address bar and set page zoom to 100% (Settings → Safari → Page Zoom also lists it). A Home Screen app resets when you quit and reopen it.
